Ingredients

  • 200 g self-raising flour
  • 170 g Greek yoghurt
  • 200 g hummus
  • 1 celery stick, finely chopped
  • 1 carrot, finely chopped
  • Handful of parsley, finely chopped
  • 1 tsp paprika
  • 1 tbsp butter
  • 1 tbsp finely chopped parsley

Instructions

  1. Step 1: In a large bowl, combine self-raising flour and Greek yoghurt. Mix with a spoon or your hands, then knead for about 5 minutes until you have a soft, bouncy dough. Add more flour if the dough feels too sticky. Cover with cling film and set aside while you prepare the filling.
  2. Step 2: In another bowl, mix the hummus with finely chopped celery, carrot, and parsley until well combined. Make sure the vegetables are chopped very finely for even distribution.
  3. Step 3: Once the dough has rested, knead it again for 30 seconds, then divide it into 4 equal pieces.
  4. Step 4: Take one dough ball and flatten it gently with your fingers to about 3/4 inch thick. Place a large tablespoon of the hummus filling in the center, then bring the edges of the dough up to enclose the filling, sealing it into a parcel. Don’t worry if some filling leaks out—it will firm up when cooked. Flip the sealed parcel so the seam is down, then flatten it to about 1/2 inch thick. Repeat with the remaining dough and filling.
  5. Step 5: Heat a non-stick frying pan over medium-high heat.
  6. Step 6: Carefully place the flatbreads in the dry pan and cook for 3-5 minutes on each side. Flip when they turn golden brown and cooked through.
  7. Step 7: While the flatbreads cook, melt butter in a small bowl with paprika and chopped parsley using the microwave for about 30 seconds. Stir and set aside.
  8. Step 8: Once cooked, let the flatbreads cool slightly. Brush with the melted butter mixture before serving, or store for later enjoyment throughout the week.

Tips & Variations

  • For extra flavor, add a pinch of garlic powder or cumin to the hummus filling.
  • Use plain flour instead of self-raising flour, but add 1 tsp baking powder to help the dough rise.
  • Swap the butter topping for olive oil and lemon juice for a lighter drizzle.
  • Try adding chopped olives or sun-dried tomatoes into the filling for a Mediterranean twist.

Storage

Store leftover flatbreads in an airtight container in the refrigerator for up to 4 days. To reheat, warm them in a dry skillet over medium heat for a few minutes on each side until heated through. They also freeze well—wrap individually in plastic wrap and place in a freezer bag for up to 2 months. Thaw before reheating.

FAQs

Can I use regular flour instead of self-raising flour?

Yes, you can use plain flour if you add about 1 teaspoon of baking powder to the flour to help the dough rise and become fluffy.

Is this flatbread suitable for vegans?

The dough and filling are vegan-friendly, but the butter topping is not. You can replace the butter with olive oil or a vegan butter alternative to keep it vegan.
