  • ½ cup red bell pepper, minced
  • ½ cup vegetable broth
  • ½ cup green bell pepper, minced
  • ½ cup water (or broth)
  • 1 cup yellow onions, minced
  • 1 tbsp tomato paste
  • 1 tbsp garlic, finely minced
  • 2 tsp sherry vinegar
  • 1 can petite diced tomatoes (14.5 oz)
  • 2 cans black beans, drained and rinsed (15.5 oz each)
  • 2 tbsp dried minced onion flakes
  • 2 bay leaves
  • ¼ tsp oregano
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp onion powder
  • ½ tsp ground cumin
  • ½ tsp sea salt, or more to taste
  • ⅛ – ¼ tsp cayenne pepper
  • Chopped fresh cilantro or parsley for garnish
  • Cooked brown rice or rice of choice, for serving

Instructions

  1. Step 1: In a small bowl, combine all the dried herbs and spices except the bay leaves. Set this mixture aside.
  2. Step 2: In a Dutch oven, sauté the minced onions, red bell pepper, green bell pepper, and jalapeno over moderate heat for 7 to 10 minutes until tender.
  3. Step 3: Add a tablespoon of water if the vegetables begin to stick or to prevent burning.
  4. Step 4: Stir in the tomato paste and minced garlic, then sauté for 30 seconds until fragrant.
  5. Step 5: Add the herb and spice mixture, sauté briefly to release their aroma, then add the vegetable broth, sherry vinegar, diced tomatoes, bay leaves, black beans, and water. Stir well to combine.
  6. Step 6: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes.
  7. Step 7: Remove the lid and taste. Add cayenne pepper and adjust other seasonings as desired.
  8. Step 8: Using a potato masher or fork, mash about one-third of the black beans to create a creamy texture. Stir to combine and simmer for a couple more minutes.
  9. Step 9: Remove and discard the bay leaves. Serve the beans immediately over cooked rice, garnished with fresh cilantro or parsley.

Tips & Variations

  • For extra smokiness, add a pinch of chipotle powder or a splash of smoked paprika.
  • Use low-sodium broth to control the saltiness.
  • For a thicker texture, mash more beans or simmer uncovered longer to reduce liquid.
  • Add a squeeze of fresh lime juice before serving for a bright finish.
  • Serve alongside fried plantains or a simple green salad for a full Cuban-inspired meal.

Storage

Store leftover beans in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stove over low heat, adding a splash of water or broth if needed to loosen the texture.
