Ingredients

  • 12 slices sandwich bread
  • 8 slices bacon, cut in half
  • 4 tbsp. mayonnaise, divided
  • 1 tbsp. prepared basil pesto
  • 1 tbsp. prepared sun-dried tomato pesto (or pureed sun-dried tomatoes)
  • 1/2 lb. shaved ham
  • Romaine or green leaf lettuce
  • 4 avocados, peeled and sliced
  • 1/2 lb. shaved turkey
  • 4 slices cheese (Swiss, mozzarella, etc.)
  • Potato chips, for serving

Instructions

  1. Step 1: Toast the bread until lightly golden brown; set aside.
  2. Step 2: Fry the bacon until just barely crisp, then drain on a paper towel; set aside.
  3. Step 3: In a small bowl, mix together 2 tablespoons of mayonnaise and the prepared basil pesto. In a separate small bowl, mix together the remaining 2 tablespoons of mayonnaise and the prepared sun-dried tomato pesto.
  4. Step 4: Spread some of the basil pesto mayonnaise onto one side of 2 pieces of bread. On one piece, layer a few slices of ham over the basil pesto mayonnaise, then add some lettuce. On the other piece, layer half the avocado slices on the basil pesto mayonnaise, then top with a few strips of bacon. Place the avocado and bacon slice, ingredient side down, on top of the ham and lettuce slice.
  5. Step 5: Spread some sun-dried tomato pesto mayonnaise on top of the assembled bread layers, then add a few slices of turkey and lettuce. Spread sun-dried tomato pesto mayonnaise on one side of a third piece of bread, top with remaining avocado slices, a few strips of bacon, and a slice of cheese. Place this piece, ingredient side down, on top of the sandwich. Repeat to build remaining sandwiches.
  6. Step 6: Use a sharp knife to cut each sandwich diagonally in half, then again into fourths. Serve with potato chips.
